        About this winei

Dalfarras is about wine, art and family. Myself as the winemaker, my wife Rosa as a creative soul who brings her passion for the natural landscape into her works and a vibrancy to the Dalfarras labels (as well as providing her maiden name Dalfarra to its naming), and our daughter Hayley, bringing a new generational perspective, along with an energy and passion for the environment.
Working together as ‘partners in crime’ we offer a range of carbon neutral, premium wines under distinctive artworks.

Alternative varietals have been a strong element of the Dalfarras range and we welcome a new varietal to that mix, Fiano.
Fiano is a white Italian wine grape variety that is grown primarily in the Campania region of southern Italy and on the island of Sicily.
Our own experience with the varietal began in 2018 when Savagnin plantings in our Comi vineyard were grafted over to Fiano, with this 2021 vintage our first crop.
“Traditionally, Italian Fianos are renowned for being strongly flavoured and fuller-bodied than most other whites. Characteristically, they express subtle nutty aromas, with fresh pear, citrus and honey flavours encased by rich and waxy textures. Part of its great appeal is that, depending on the grape’s growing conditions, it will embrace many wine styles, from steely fresh and mineral to indulgently lush and rich” www.winecompanion.com.au
Our 2021 Fiano leans towards the steely fresh and mineral but has an undercurrent slippery, soft and round texture like Chardonnay.
Put quite simply, this wine is seriously good and one of the standouts from our highly rated 2021 vintage.
